    So in the picture, which fighter is the WOD and which one is the CrossFitter?? By the looks of this WOD, it’s TKO – yikes! Really looking forward to tomorrow (maybe 🙂

    Didn’t have a chance to post a recipe for the week – this is one of my favorites! Baja Fish Tacos! I will post the original recipe – you adjust to make it more zone friendly…

    3/4 lb mahi mahi or other firm white fish fillets
    2 t fajita seasoning
    2 shredded cabbage (or broccoli, from a bag)
    1 T fresh lime juice
    1/2 t salt (reduce that!)
    3T chopped fresh cilantro
    8 6 inch corn tortillas (I used flour)
    2.5 T reduced fat sour cream, didn’t use
    1/2 avocado, diced
    bottled salsa
    lime wedges

    Spray grill rack with PAM and preheat. Sprinkle both sides of fish with fajita seasoning, gently pressing into fish. Grill fish 3-4 minutes on each side or until fish flakes easily when tested iwth a fork. Flake into pieces and keep warm.

    Mix cabbage, cilantro, lime juice and salt. Warm tortillas. Place ingredients on table for assembly. Spread each tortilla with 1 t sour cream and top with fish, cabbage mixture and avocado. Serve with salsa and lime wedges. Serves 4, 235 cal, 6 g fat, 1 g sat fat, 507 mg sodium, 28g carbs, 20g protein.

    Notes: could use shrimp, or a tiny bit of cheese and tomatoes and more lime
