Taco Bowl
(I made this recipe up last week, and it’s deliciousness in a bowl!)

Ingredients:
1 lb. ground beef
1/2 pint grape tomatoes
1/2 medium onion, chopped
2 cloves garlic, finely chopped
1 jalapeno, finely diced
1 bunch of spinach, chopped
1 Tbsp chili powder
1 Tbsp ground cumin
1 Tbsp onion powder
2 tsp oregano
1 tsp paprika
1 cup warm water
1 tablespoon fresh oregano, finely chopped
1 teaspoon finely chopped fresh thyme
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

First, brown the ground beef and few onions. Drain off the fat, and add this spice blend to the meat. Let simmer until most of the water is gone:
1 Tbsp chili powder
1 Tbsp ground cumin
1 Tbsp onion powder
2 tsp oregano
1 tsp paprika
1 cup warm water

While the meat is going, make the salsa vera cruz (from Bobby Flay and Food Network)
1/2 pint grape tomatoes
1 tablespoon fresh oregano, finely chopped
1 teaspoon finely chopped fresh thyme
2 cloves garlic, finely chopped
1 jalapeno, finely diced
1/4 medium red onion, diced
2 tablespoons canola oil
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Heat a large saute pan over medium heat. Combine the tomatoes, olives, capers, oregano, thyme, garlic, jalapenos and red onions in a medium bowl. Add the canola oil to the pan, and cook the mixture 1 minute. Remove the pan from the heat and let sit 2 minutes. Transfer to a bowl and let cool to room temperature. Finish with the olive oil and season with salt and black pepper.

Last, make the guacamole:
Cut up two avocados and smash into a bowl. Add some extra tomatoes, onions, jalapenos and seasonings (either guacamole seasoning, fajita seasoning, etc. Use whatever you like).

Plate your dish! In a bowl, layer spinach, meat, salsa and guacamole.
